Fiesta Guacamole with Fresh Mango, Papaya and Pomegranate

It’s a celebration people!
This Sunday, June 15th is Father’s Day and I feel there is no better way to celebrate a loved one than to surprise them with their favorite foods.

Growing up, a lot of our bonding with our Dad revolved around food. Every Wednesday he would take my sister and I out for dinner – a major highlight of the week. I strongly remember being unable to focus at school on Wednesdays because I’d be so excited for the evening ahead.

While it was pretty exciting stuff as a child to be able to order my favorite meals, most importantly Wednesdays were a chance to catch up with one another, tell stories and play in the park after stuffing ourselves silly.

Going out for dinner was always an adventure with our Dad. During the drive to and from the restaurant he would tune into the golden oldies radio station and we’d all sing at the top of our lungs. We were especially impressed by how low or high he could distort his voice during songs like Runaway by Del Shannon. In our eyes, this made him incredibly cool.

I will always appreciate the great effort and thought he put into making our time spent with him so special and fun. He has given both my sister and I such happy and fond childhood memories.

While my sister and I would love to celebrate Father’s day in person with my Dad, we now reside in different countries. Although it’s very difficult at times to be apart, we are lucky enough to be able to fly out to see each other from time to time. And when we do, it’s just as special as it ever was.

So do we still bond over food? You bet! One of the more recent meals we had together was at an amazing little restaurant in Toronto called MexiTaco. If you are ever in Toronto, you’ve got to go! The Guac is especially amazing!

Fiesta Guacamole with Fresh Mango, Papaya and Pomegranate

Prep Time: 5 minutes        Serves: 4 – 5 as an appetizer or party dip         Author: Milk & Marigolds

Ingredients:
2½ Avocados
½ cup of fresh cubed mango (¼ inch)
½ cup of fresh cubed papaya (¼ inch)
½ cup of pomegranate fruit
Juice from one lime
¼ cup of chopped cilantro

Instructions:
1. Lightly mash the avocados.

2. Cube the papaya and mango.

3. Remove pomegranate fruit from the peel.

4. Chop cilantro.

5. Gently fold the all ingredients together and add the lime juice. Mix again.

6. Serve with gluten-free corn chips. Enjoy!
